Distillation is an age-old process that sits somewhere between art and science. This alchemy takes place in our copper pot still, lovingly named Olive, after Olive Pink – an Australian botanical illustrator, anthropologist and activist for Aboriginal rights.
Inside the belly of Olive, we use a gentle heat to separate and refine the many flavour and aroma compounds hidden within our botanicals. We are able to extract them by virtue of their different boiling points. Steeped in neutral alcohol and pure water, the botanicals are gradually heated in our copper still, slowly vaporising an array of delicate compounds at different temperatures. This flavour-rich vapour is then cooled, returning it back to an intensified liquid magic. We collect only the heart of this distillate, the most desired part containing all of the finest flavours and aromas we seek from our botanicals.
